Cauliflower 'Fried' Rice

Ingredients
  

  • 1 head cauliflower riced- with a blender, food processor or knife
  • 2 cups snap peas
  • 2 cups cabbage purple of white, thinly sliced
  • 1 1/2 cups edamame shelled and hulled
  • 1 bell pepper thinly sliced

Dressing

  • 1'' fresh ginger
  • 1/4 cup rice wine vinegar
  • 3 tbsp sesame oil
  • 2 limes juiced
  • 2 tbsp soy sauce of liquid aminos
  • 2 tbsp honey use monk fruit to keep it completely sugar-free
  • Sriracha or garlic chilli sauce to taste

Instructions
 

  • Create your cauli-rice by using a blender, food processor or by hand with a knife
  • Thinly slice bell pepper and cabbage
  • If making for meal prep, evenly distribute ingredients amongst your 3 containers. If cooking to eat promptly, throw all ingredients into a wok or frying pan with 1 tbsp of coconut or olive oil.
  • Pour the dressing over the wok and sauté for 10 minutes
  • Dish up and enjoy!
